🥘 Ingredients

You can choose a pork shoulder butt roast that either has or does not have a fat cap. It is a personal preference!

  • Pork Shoulder Butt Roast - 5-pound boneless pork shoulder butt roast. This roast also goes by picnic roast, pork picnic shoulder, pork butt, Boston butt, and blade roast.
  • Olive Oil - 2 tablespoons of extra virgin olive oil (EVOO). Dijon, stone ground, or German mustard can also coat the roast.

🔪 How To Roast Pork Shoulder

While this roast spends some time in the oven, the prep work is super quick! Grab your roasting pan and knife, and you're ready to start!

A 5-pound roast will feed about 10 people, depending on how hungry everyone is! Servings are based on half-pound portions.

Preheat & Prep

Step 1: Preheat. Start by preheating your oven to 400°F (205°C/Gas Mark 6).

(Optional) Step 2: Clean. Rinse your 5-pound pork roast with cool water and pat it dry with paper towels.

Season The Meat

Step 3: Season the roast. Place your pork onto a roasting rack and coat it with 2 tablespoons of extra virgin olive oil (EVOO or mustard). Generously season the meat with 2 tablespoons of pork roast seasoning.

Roast, Rest & Serve

Step 4: Roast. Roast the pork fat side up for 1 hour (it should appear lightly browned). Then, reduce the temperature to 300°F (150°C/Gas Mark 3) and continue to roast for 4 more hours, or until the pork is tender and the fat cap (if you have one) is crispy.

Step 5: Rest. Transfer the roast to a large platter or cutting board and loosely cover it with aluminum foil. Allow it to rest for 30 minutes before slicing and serving.

💭 Tips & Notes

  • Meat Selection: Choose a pork shoulder butt roast with or without a fat cap based on your preference. Both cuts are suitable for this recipe and yield delicious results.
  • Seasoning the Roast: Coat the pork roast with extra virgin olive oil or mustard before generously seasoning it with pork roast seasoning. This adds flavor and helps to create a delicious crust.
  • Roasting Process: Start by roasting the pork fat side up at a higher temperature (400°F) for the first hour, then reduce the temperature to 300°F and continue roasting until the pork is tender and the fat cap is crispy.
  • Resting the Meat: Transfer the pork to a platter or cutting board and loosely cover it with aluminum foil after roasting. Let it rest for 30 minutes before slicing. This resting period allows the juices to be redistributed, ensuring a moist and flavorful roast.

🥡 Storing & Reheating

Place your roast leftovers into a sealed container and keep them in the fridge for up to 4 days.

To freeze, let your roast cool completely, wrap it tightly in heavy-duty aluminum foil, and place it into a freezer storage bag. You can freeze it for up to 6 months. Allow frozen leftovers to fully defrost before reheating.

To reheat, place your leftovers onto a rimmed baking sheet, splash it with water or broth, and cover it with aluminum foil. Bake it in the oven at 300°F (150°C) until heated thoroughly.

❓ FAQ

How Long Does Pork Shoulder Butt Roast Take To Cook?

This roast was cooked at a higher temperature to start (400°F/205°C/Gas Mark 6) and then finished at 300°F (150°C/Gas Mark 2) for approximately 1 hour per pound. Cook until the pork reaches an internal temperature of 145°F. Alternatively, roast pork at 350°F (175°C/Gas Mark 4) for 35-40 minutes per pound.

Should I Put Water At The Bottom Of My Roasting Pan?

Nope! If you add water to the pan, it will steam the pork rather than roast it. This is perfect if you intend to pull the pork roast, but it is unnecessary for sliced roasts. *Add 1 cup water or broth for pulled pork if desired.

Do You Cover Pork Shoulder Butt When Roasting In The Oven?

Nope! Use a higher temperature first and leave the roast uncovered to develop a nice and crispy outside. Then, reduce the temperature to finish cooking. *Cover with a sheet of aluminum foil if the roast starts browning too deeply.

FAQs

Which is the best cooking method for a pork shoulder? ›

Pork shoulder benefits from long, slow cooking that tenderizes the meat and melts the fat. The best cooking methods for pork shoulder are braising or stewing, but it may also be fried, baked, or made into ground pork.

How do you keep pork shoulders moist? ›

Try brine: Choose a wet marinade rather than a dry one. Dry rubs may work fine but brine or a wet rub will add that extra moisture along with the flavor that will penetrate deep inside the meat. Keep a spray bottle handy: Keep spraying the meat during smoking or reheating to replace the lost moisture.

What is pork shoulder roast good for? ›

It's a versatile and economical cut that takes deliciously to roasting, braising, stewing, and slow cooking. Low, moist heat turns the meat so tender and succulent, it just falls away from the bone and practically melts in the mouth. In the U.S., pork shoulder is the perfect pick for pulled pork.

Does pork shoulder get more tender the longer it cooks? ›

Unlike the more lean tenderloin and chops, pork shoulder is an incredibly forgiving cut of meat. It becomes more tender as it cooks and benefits from a lengthy cook time, so even if it stays on the heat a few minutes too long, you won't suddenly end up with something dry or rubbery.

Should you sear pork shoulder before roasting? ›

Sear it good. This is an optional step, but if you have the time, adds a lot of flavor. Heat a little oil in a large skillet or your Dutch oven over medium-high heat. Sear the pork heavily on all sides until golden brown.

What liquid to add to pork shoulder? ›

For this particular recipe, I filled a spray bottle with apple cider vinegar and lemon juice and periodically spritz my pork shoulder. The acid from the spritz helps keep it moist and render the fat. Depending on what you're making, you can use different liquids like co*ke or Pineapple Juice, too.

Do you add water to pork shoulder? ›

Bake the pork shoulder roast in the oven

Place the pork shoulder roast fat-side up on the rack. Pour 3 cups of water into the roasting pan, or enough to cover the bottom of the pan with a thin layer.

How to get more flavor in pork shoulder? ›

This could be your favorite pork shoulder rub, or you can always make your own. A simple blend of garlic powder, salt, and pepper will do the trick just fine. Moist and cold meat absorbs more smoke, so after your meat is seasoned, refrigerate it until you're ready for the smoker.

Why is my pork shoulder roast tough? ›

Collagen is chewy as all get-out. And it's why those cuts are considered tough. If you cooked a hunk of pork shoulder to medium-rare—around 140℉ (60℃)—it wouldn't be pleasant to eat.

Is pork shoulder healthier than beef? ›

Both pork and beef are high in proteins, fats, vitamins, and minerals. However, beef tends to have more calories, saturated fat, and cholesterol than pork. Pork may be a better choice, then, if you're trying to manage your blood cholesterol levels.

Is pork shoulder roast OK for pulled pork? ›

Pork shoulder is ideal for pulling purposes. It has an optimum fat content that yields to create tender, melty meat, but it's essential you cook it slowly to allow the protein to break down properly. Take it out of the oven too early and you may as well dine on a pair of wellies.

Is it better to slow cook or pressure cook pork shoulder? ›

slow cooking. Slow cooking the meat means it never has the chance to toughen up and will be extra silky and tender. Pressure cooking is faster, though you may lose a little bit of the tenderness. If you're going for the pressure cook method, be sure to get a pork shoulder or pork butt, as opposed to a pork loin.

What is the 3 2 1 method for pork shoulder? ›

This was all Steven's idea. Buoyed by the success of 3-2-1 ribs, one of our most popular blogs, Steven wondered what would happen if we treated a pork butt (aka, shoulder) to 3 hours of smoke, 2 hours wrapped in butcher paper, foil, or parchment paper, and 1 hour unwrapped.

Is pork shoulder better in oven or slow cooker? ›

Results: The oven roasting method using the pork shoulder definitely yielded the best results. The flavour of the pulled pork was amazing and the texture wasn't grainy or spongy like the pork that was cooked in the slow cooker (probably because the tenderloin is a much leaner cut).

How many hours does it take to cook a pork shoulder? ›

Cover, place in oven and cook for 2 1/2- 3 hours, or until internal temperature of meat is 170 degrees F. Remove from oven and pan-- let roast cool for a few minutes. Slice meat or shred as for pulled pork (I usually do half sliced and half pulled).
