Chocolate Fruit Cake
Ultimate chocolate fruit cake recipe. This is one of the best fruit cake recipe you can ever imagine and so simple to make. The only thing it takes an hour to bake and it is worth every second.
Even though i have three variation of plum cake recipe in my blog. My viewers have been asking for a fruit cake which has chocolate in them. So I decided to bake it this year and share it. I made it couple days back and i am telling you it turned out to be super yummy and loved it to the core.
About Chocolate Fruit Cake
Fruit cakes are a popular cakes baked during Christmas season. The cake is filled with juicy dried fruits and nuts. Fruit Cake which is rich and moist.
You could add any dry fruits in it as per your liking. The list of dry fruits are pretty endless, you could add dried prunes, cherries, currants, candied lemon peel, candied orange peel and many more.
Delicious eggless chocolate fruit cake or plum cake which turned out super moist and fruity. This chocolate flavour is so intense and taste amazing.
In this recipe we are adding some cocoa powder to make it chocolate fruit cake. In this post I have shared recipe for making this chocolate fruit cake in a pan or a kadai if you don't have oven.
I baked it yesterday and believe it or not everything got over right now. I took a few pieces (which I saved it from my sisters) to office and everyone loved it. They told me that it is so much better than the store bought one. I love plum cakes a lot than any other cakes, but some bakery here supply this with dry little fruits in it and the cake itself looks so dry. But there is one bakery here which supply a awesome cake which has a lovely flavour of fruits in it. And this one came better than that too. Which is pretty amazing.

Dried Fruits - I like to use a combination of seedless black raisins, prunes, dates, tutti frutti. You can use candied peels, citrus peel, currants as well.
Spice Powders - cinnamon is the favour which I used in this cake. You can use nutmeg, ginger, cloves as well.
Plain Flour - I used refined all purpose flour in this cake which makes the cake tender and light.
Raising Agent - baking soda and baking powder is added to the cake.
Cocoa Powder - not only this adds a hint of chocolate flavour, also a fruity flavour.
Sweeteners - honey and brown sugar is used in this cake. but you can add regular sugar instead of brown sugar.
Oranges - juice of orange and the peel is grated and added for citrus aroma.
Butter - butter adds the flavour for the fruit cake.

How to Make Chocolate Fruit Cake (without Oven)
Boiling Fruits
Take raisins, dates, prunes, orange zest, orange juice, cocoa powder, butter, brown sugar, honey, water in a sauce pan and bring it to a boil. Boil for 5 mins. Cool it down for 30 mins. Add in egg and mix well.
Making cake batter
Add in flour, baking soda, baking powder, cinnamon and mix well to a smooth batter.
Baking cake
Spoon this in a parchment lined baking pan. Heat a heavy bottom kadai covered for 10 mins. Now place a separator in the bottom and place cake pan. Cover and cook for 40 to 45 mins till cake is cooked. Remove and cool completely Un mould and serve.

Boiling Dried Fruits
1)Take seedless raisins, apricots, dates and prunes in a sauce pan. You can use any combination of dried fruits.

4)Pour in water, cocoa powder in the sauce pan.

5)Add in grated orange zest, honey over the butter.

6)Place the dried fruit sauce pan on heat. Cook for 5 minutes till butter melts and the dried fruits gets soft. Now remove the sauce pan from heat and allow them to cool to room temperature.

7)Once the chocolate mixture is cooled enough. Add in eggs and whisk till combined. Add in plain flour.

Baking Chocolate Fruit Cake (without oven)
10)Spoon the batter in a parchment lined baking pan. You can bake the cake in oven or without oven.
For Baking in an oven
Preheat oven to 150 degree C. Butter a deep round tin(8 to 10 inchh) and line the bottom with parchment paper or wax paper. Now line the sides with parchment paper as well in the way that the paper is somewhat extended above the tin which prevents the cake from burning and sticking all over the tin when it rises as it bakes. Butter all over the tin generously and keep it aside.
Pour the batter into the tin and bake it the oven for 45 mins to 1 hour. The cake looks little moist and sticky on top but has some moist texture in the middle. Remove it from the oven and allow to cool down completely. Now remove it from the tin and allow to cool down completely again. Since you have lined it with parchment paper it won’t be hard to remove the cake from tin. Decorate it as per your wish and serve or store in an air tight container for 3-4 days.

This is how you make a super moist chocolate fruit cake without eggs. This eggless fruit cake has all the Christmas flavours in them but made without eggs. There are few tweaks which you might need to make for super moist eggless cake. I followed the same recipe as mentioned above. But you have to use extra plain flour and mashed banana as egg substitute.
Ingredients Used
- Dried Fruits (1 cup Raisins, 5 Apricots, 10 Dates, ¼ cup tutti fruity, 5 cherries)
- 100 grams Unsalted Butter
- ½cup Brown Sugar
- ½cupHoney
- 1tsp Orange Zest
- ¼cupOrange Juice
- ½cupWater
- ½cupWater
- 3tbspCocoa Powder
- ¾ cup Banana mashed (egg substitute)
How to make chocolate fruit cake without eggs
1)Grease a 8 inch nonstick pan with oil and set aside. Preheat oven to 160 degree C.
Take all the ingredients mentioned above except banana in a sauce pan and cook for 5 minutes till it soft. Set aside the mixture so it cools completely.
Once cooled, you are going to add in ¾ cup of mashed ripe banana. This acts as egg substitute in the cake.

2)Now for the dry ingredients mix plain flour, walnuts, baking soda, baking powder, cinnamon in a bowl. Add in the cooled banana dry fruit mix and combine.

3)The batter will be slightly thick, pour this into the prepared pan. Bake at 160 degree C for 1 hour.

4)Once baked cool it completely. Un mould from baking tin and allow the cool.

How to Feed a Fruit Cake
Fruit cake matures as it sits. You can make fruit cakes a month in advance. But this fruit cake since it is boiled you can make it a week in advance and store in a cool place.
You can start feeding the cake 2 to 3 days before serving. Take some rum and brush it all over the cake. Repeat this daily. This is how you feed a fruit cake.
Soaking Dried Fruits for Fruit Cake
Usually for fruit cakes they soak these dried fruits in brandy or rum for a month, so that the fruits gets all flavours and it plumps up a little. But in this cake since we are boiling the fruits, it gets the plumpness and flavour without any hard work. And the heat gives so much moistness to the cake.

I waited for the Christmas season to arrive to try this recipe and finally I made it. It came out so much better than I expected, frankly I am now crazy about this and want it each and every day.
If you want to make it even more authentic, just use a slash or two of rum that will bring more Christmas flavour to the cake.
Expert Tips
- If you are planning to bake it in oven. Bake it in 160 degree c for 40 to 50 mins.
- You can increase the amount of fruit if you want. Use only seedless black raisins.
- If you don't have prunes and dates. Use 2 cups of black raisins.
- You can add ginger powder, cardamom powder, mix spice powder, nutmeg powder for added flavour.
- For baking without oven. Use a heavy bottom pan with fitting lid. Use hard anodised pan for best result. Don't use nonstick pan. since it is not ideal to heat nonstick empty. You can also use Use aluminium and indalium pan.
- You can use a pressure cooker for baking. If you are using pressure cooker, don't use whistle or gasket.

Chocolate Fruit Cake
Take raisins, dates, prunes, orange zest, orange juice, cocoa powder, butter, brown sugar, honey, water in a sauce pan and bring it to a boil. Boil for 5 mins. Remove it from heat and allow it to cool for 30 mins. Add in egg and mix well. Add in flour, baking soda, baking powder, cinnamon and mix well. Spoon this in a parchment lined baking pan. I used two 6 inch round cake pans.
Baking without Oven
Heat a heavy bottom kadai covered for 10 mins. Now place a separator in the bottom and place cake pan. Cover and cook for 40 to 45 mins till cake is cooked. Remove and cool completely. Un mould and serve.
Baking in oven
Preheat oven to 150 degree C. Butter a deep round tin(8 to 10 inch) and line the bottom with parchment paper or wax paper. Eggless Chocolate Fruit Cake
Preheat oven to 160 degree C. Grease a 8 inch nonstick pan with oil and set aside.
Take all dried fruits in a sauce pan. Add in orange juice and pulp, sugar, butter, cocoa, water and bring it to a boil. Cook for 5 minutes. Take it off the heat and allow it to cool. Once cooled, Add in mashed banana and mix well. Now in a separate bowl, mix flour, baking powder, baking soda, spices and walnuts. Pour chocolate mix in and fold gently.
Spoon the batter into pan and bake for 1 hour. Remove and cool completely. Slice and serve.
