Homemade Caramels are so easy to make with this simple step by step tutorial. Cook for 6 minutes in the microwave for amazing homemade caramels perfect for eating and sharing.

With the Christmas and Holiday Season upon us, I am always looking for great recipes and gift ideas to share with family and friends. These Homemade Caramels are so easy to make and better yet…are so yummy!

The best thing about this Homemade Caramel Recipe is that they only take about 6 minutes to make…in the microwave! Can you believe it? These Homemade Caramels could NOT be any easier to make.

EASY HOMEMADE CARAMELS

If you are new to making Homemade Candy, this should be your first Candy Recipe. They can be eaten almost immediately if you want to dip some apples in it (it hardens quickly) or wait for them to harden.

TIPS FOR MAKING HOMEMADE CARAMELS

  1. As always, do NOT double the batch if you are wanting to make more. Candy recipes in my experience need to be made in single batches for best results. So make one batch at a time if you want them to turn out correctly.
  2. Do NOT substitute margarine, or a butter spread for Butter.
  3. Use fresh high quality ingredients.

HOW TO STORE HOMEMADE CARAMELS

These caramels will soften if left out in room temperature. I find they last better if you store them in the refrigerator until you are ready to use them or gift them to friends and family. They can be left out at room temperature if you are going to be eating them soon.

HOW LONG WILL HOMEMADE CARAMELS LAST

These caramels should last up to three weeks if you store them in the fridge. You can also freeze them so they can last up to 2 to 3 months in the freezer before using them. Thaw before eating them.

WHAT CAN I USE CARAMEL FOR?

You can use this caramel recipe for several different things if you don’t plan on eating it plain.

  • in our homemade turtles recipe
  • in our bear claw candyrecipe
  • serve with ice cream
  • dip in chocolate or drizzle chocolate over them
  • dip apples or pretzels into it when it is warm
  • as a caramel sauce

WHAT TO WRAP CARAMELS IN

You can wrap your homemade caramels in a few different things to keep them fresh and to serve them individually. Here is what I would recommend.

  1. parchment paper
  2. wax paper
  3. plastic wrap

HOW TO WRAP HOMEMADE CARAMELS

  1. Use a sharp knife to cut your cooled and hardened caramels into small bite size pieces.
  2. Cut your wrapping material in squares or rectangles that are larger than your cut caramels.
  3. Wash your hands well with a soap that is not scented. Scented soap can transfer onto your caramels.
  4. Use plastic or latex gloves if giving away and serving to others.
  5. Spray a little cooking oil on your hands or gloves to prevent the caramels from sticking to your fingers.
  6. Take one caramel at a time and wrap the wrapping around it so the caramel is completely covered in the middle of the wrapping.
  7. Take each end and pinch it together by twisting it around until it is tight.
  8. Repeat this process on the other side of the caramel.
  9. Take a small piece of string or baker’s twine and tie a bow so that the wrapping end stays tight and in place.
  10. Repeat with tying a bow on the other side.

HOMEMADE CARAMELS RECIPE VIDEO

I created a quick video to show you how to make homemade caramel candies with our simple recipe. They are so easy to make.

CAN I MAKE THIS RECIPE ON THE STOVE TOP?

Yes! This homemade caramels recipe can be made on the stove top. Combine all the ingredients and cook on the stovetop in a sauce pan over medium heat. Use a candy thermometer and stir constantly until your mixture is in a steady boil. Remove from heat when the caramel mixture reaches the soft ball stage. You can do a cold water test to make sure the caramels have the right texture and consistency but aren’t too hard or sticky. Pour into a prepared pan and cool. Then cut and serve as you would the other recipe.

GIVE HOMEMADE CARAMELS AS CHRISTMAS GIFTS

Wrap them up in some parchment paper and give them to your friends and family for a special Christmas gift…or take the caramel squares and dip them in chocolate. They last for up to a month if wrapped or stored in the refrigerator. They will get soft if left at room temperature.

6 MINUTE HOMEMADE CARAMELS RECIPE (2024)

FAQs

What makes homemade caramel hard? ›

Temperature is key when making candy. The difference between a soft caramel and one that's hard and overcooked is all in the temperature. Candy thermometers—like this instant-read thermometer—let you know exactly what stage the caramel is in (thread, soft-ball, firm-ball, hard-ball, soft crack or hard crack).

Why do my homemade caramels stick to the wax paper? ›

In general the paper sold for home use is too light weight, the grain of the paper isn't made to withstand twisting (it tears), and the wax coating is too light to prevent the moisture from the candy from seaping into the paper and weakening it thus causing it to tear and stick.

Should you refrigerate homemade caramels? ›

Technically caramels don't need to be refrigerated; but for ease of cutting and longest shelf life I always refrigerate. You'll get a bit of sweating when you take them in and out of the refrigerator, but that's OK. I like to place a layer of waxed paper, and then a layer of foil over the caramels before refrigerating.

How do you keep melted caramel from hardening? ›

If too many bits of sugar get stuck to the side of the pan, they will harden and can cause the caramel to seize or become gritty or grainy when you add in the butter and/or the cream. Prevent this by gently swirling the sugar around as it melts, while holding the pan's handle, instead of using a utensil to stir it.

Why won't my caramel get hard? ›

If caramels are too soft, that means the temperature didn't get high enough.

What can go wrong when making caramel? ›

Don't Be Intimidated by Homemade Caramel Sauce, Just Avoid These Common Mistakes
  1. Using the Wrong Pot. You can't make a caramel sauce with a thin or flimsy pot. ...
  2. Dumping in All of the Sugar at Once. ...
  3. Not Setting up Your Mise en Place. ...
  4. Pulling the Caramel too Soon. ...

Do you use wax paper or parchment paper for caramels? ›

Line a glass or ceramic pan with parchment paper and then butter the parchment liberally. Allow the parchment paper to hang over the sides of the pan--it will make the cooled block of caramel easier to remove when it's time to cut the candy into pieces.

Why are my homemade caramels greasy? ›

Toffees and caramels both contain butter and sugar in high quantities. If the toffee or caramel is not handled properly during the cooking process, the butter sometimes separates from the sugar and forms an oily layer on top of the candy.

Can I wrap caramels in Saran Wrap? ›

Spread hot caramel to the edges of the pan and allow to cool to room temperature. Wrap with plastic wrap (or put on the lid if your pans are lidded) and store all day or overnight in the fridge.

Can you leave homemade caramel out overnight? ›

This sweet sauce can be left out at room temperature for a few days, but because of the dairy incorporated into the sauce, it's best kept refrigerated. Plus, popping it in the fridge will keep your caramel sauce fresher for longer.

Can I freeze homemade caramels? ›

You can also store your caramels in the freezer in a container or bag to further extend their shelf life; there, they will last as long as a year. If you do so, however, be sure to protect your teeth by letting them warm up to room temperature before eating.

What is the difference in Carmel and caramel? ›

Generally, “caramel” is defined as a chewy, light-brown candy made from butter, sugar, and milk or cream. For example: I love eating caramels because they are soft and chewy. In contrast, “Carmel,” is used as a proper noun, and it is a popular beach town in California, known as Carmel-by-the-Sea.

Can I use milk instead of heavy cream for caramel? ›

Caramel sauce is a wonderful topping for ice cream, cake, pie, and bread pudding. While a typical caramel recipe calls for heavy cream, what if you don't have any handy? This easy recipe uses milk and butter instead, ingredients you're more likely to have on hand.

Why is my sugar crystallizing when making caramel? ›

But sugar actually releases additional heat as it breaks down, making the temperature rise faster. This means that the sugar can actually be hotter than the parts of the pan away from direct heat. If you stir it, the hot sugar comes in contact with the cooler sides of the pan and crystallization sets in.

How long does it take for caramel to get hard? ›

How long does it take caramel to set? Give your caramel at least two hours to set, or overnight if possible. You can also pop caramel into the fridge to help it set up faster. The caramel will sweat a little when brought out of the fridge, but will still taste fine.

Why is my caramel hard in crème caramel? ›

It's normal. Caramel hardens when you pour it into a ramekin but gradually melts into syrup during cooking.
